gluten free pumpkin bread

This is the best Pumpkin Bread.  It is a favorite at our house.  It is a favorite for even non Celiacs!

 

Pumpkin Bread

INGREDIENTS

  •  3 cups white sugar
  • 4 eggs
  • 2/3 cup water
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground allspice
  • 3 1/2 cups gluten free flour mix
  • 2 teaspoons salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 (15 ounce) can pumpkin puree
  • 1 cup chopped walnuts
  • 1 cup raisins
  • 1 cup vegetable oil
  • 2 tsp xanthium gum

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease three 7 x 3 inch loaf pans. Mix all the ingredients in a bowl. Stir in nuts and raisins. Divide batter into prepared pans. Bake for 1 hour. Cool on wire racks.
